I have a secret love affair with open face sandwiches. Sometimes I don’t want two slices of bread to fill up on, but just one. This open face egg salad sandwich is a delicious meal that you can take to work or eat at home.
What you will need:
1-2 tablespoon of diced carrots
1-2 tablespoon of diced onions
One egg (boiled)
2 tablespoons of Ranch dressing
Salt to taste
Pepper to taste
A dash of garlic powder
A small handful of mozzarella cheese
Slice of bread – I chose wheat today
Combine all ingredients except for the bread into a bowl and mix together.
Place on top of your slice of bread and toast in your over for about 5 minutes on 350 degrees.
